This a great recipe for those who think they don’t like turnips! The combination of roasting and maple syrup brings out the sugar in this delicious fall root vegetable.

Ingredients:

2 lbs. purple-top turnip, peeled and diced
¼ C coconut oil, melted
¼ C pure maple syrup
Salt and pepper

Directions:

Toss diced turnip with oil, syrup, and salt and pepper.
Roast at 350 degrees until tender and caramelized.
